This stew contains a lot of healthy nutrients. It is a bit high in calories, so if you really have to follow a low-calorie diet, this may be a bit too much. But if you just want to eat 3 healthy meals a day, this is fine.
With a stew you quickly think of winter and kale or stew. This stew is with broccoli. Also very suitable as a summer stew. Broccoli is available all year round, but broccoli from the Netherlands is available from May to November. Good to know, because seasonal food is good for the environment!
How do you make this broccoli and salmon stew?
Ingredients for four people:
- at least 600 grams of broccoli
- 1 kilo floury potatoes
- 200 grams of smoked salmon
- block of monchou cheese
- salt and pepper to taste
- half lemon
Preparation method:
Peel the potatoes and cut them into pieces. Boil them for 20 minutes. Cut the broccoli into pieces and cook it for 5-10 minutes. Combine the vegetables and add the monchou. Mash the stew as soft as you wish.

Cut the salmon into pieces and lemon into parts and place it over the stew.
