I was on my bike, back from a coffee date with one of my best friends, and I was so hungry for lentil soup! Do you know that feeling? That you are somewhere else and get so hungry for certain foods? Sometimes this is because your body needs certain nutrients. Sometimes it’s just because you really like something and a smell or thought gave you the idea.
Anyway, I got to work right away. The lentil soup had to come!
I always like it when a lentil soup is nice and spicy. I put sambal on the ingredients list, but I’d like to leave it up to you how much you want to put in it. Because what one person finds spicy, another finds bland.
For example, we always have ‘discussion’ at home about whether something is hot or not. Hubby really likes spicy food and we sometimes disagree about that.
A lentil soup is very healthy and this soup contains good nutrients. Delicious for lunch! Below you can read what I combined the soup with.
How do you make a tasty lentil soup?
Ingredients for two people:
- 1 can of lentils
- 1 shallot, sliced
- 1 garlic clove, crushed
- 2 grilled peppers from a jar, sliced
- 1 tablespoon tomato pesto
- 1 tsp ras al hanout
- 1 vegetable stock cube
- ½ liter of water
- handful of pumpkin seeds or other pips/seeds
- sambal to taste
- salt and pepper to taste
Preparation method:
Lightly brown the onion and garlic in two minutes and then add the water and stock cube. When the block is dissolved, you can add the other ingredients. Let the whole boil for 10 minutes and then puree it with a hand blender or in the blender to a delicious soft soup.
When you pour the soup into the plates, you can add some pips/seeds as a topping. This is how you see pumpkin seeds with me.
What can you eat with the soup?
We ate a Leksands Knäcke with it, which I really like and are made from rye. So good for my gut as I can’t tolerate wheat. A thick layer of spicy humus on top and a few pieces of grilled bell pepper here too.
In short, a delicious lunch with spicy flavors.
