How do you make a tasty, healthy lentil salad?

A lentil salad is tasty and easy to prepare. You can prepare this salad a few hours in advance or even the day before. It makes the salad extra tasty, because the herbs are absorbed even better.

For example, I wrote in our newsletter that I like to have this salad ready in the fridge on a busy day. This prevents you from opting for a quick, unhealthy meal. This lentil salad contains many good nutrients. Exactly what your body needs for good health. Don’t fill, but feed, so!

I opted for a ready-made hummus when making this lentil salad, but you can also make it yourself. Here you will find a good basic recipe for hummus. That’s actually better, but I didn’t have the time for it (or didn’t want to make the time for it now, because it was quite hectic 😅).

How do you make a tasty lentil salad?

Ingredients for 2 people:

  • 2 shallots finely chopped
  • 5 carrots, sliced
  • 2 cloves of garlic, crushed
  • half a liter of vegetable stock
  • can of lentils, 400 grams
  • little fresh thyme
  • 1.5 tablespoon of white wine vinegar
  • ½ teaspoon mustard
  • 5 tablespoons of good olive oil
  • spoon hummus

Preparation method:

Fruit the onions and garlic in a tablespoon of olive oil, you don’t have to take the ‘good’ one for that. That may be a regular oil. After a minute or two you can add the drained lentils and carrot and cook for 10 minutes in the broth. The lentils are already cooked, but it depends on the carrot. That’s a matter of taste how soft you want it. I always like a bit of bite.

Drain everything and make a mixture of the oil, vinegar, thyme and mustard. Stir this through the drained lentils. Then a nice shovel of humus over it and possibly a naan bread next to it.
