How do you make a healthy pasta pesto?

One of my daughter’s favorite dishes is pasta pesto. It is something she also prepares herself when she has dinner with friends. Pasta is not really healthy, but it matters a lot which ingredients you use in the pasta. This is how you make a pasta healthy or unhealthy. In the latter, pasta is a good filling, but not very nutritious. For example, white pasta with bacon and a ready-made sauce.

I like to make a healthier version. In this case by adding cauliflower to the pasta, among other things. For myself, I usually choose pasta made from red lentils. This is a very good gluten-free alternative and my stomach tolerates it better. In addition, lentil pasta is a nice colorful whole, especially if you combine it with red tomatoes and green basil.

The recipe below is based on regular (wholemeal) pasta. This time I opted for a fresh pesto from the supermarket, I find that a bit easier after work. But in itself pesto is very easy to make yourself and you can also keep homemade pesto in the fridge for a few days. Then you can use it again in another dish, or as a tasty dipping sauce.

Ingredients for 4 people:

  • 400 grams (wholemeal) pasta
  • 1 cauliflower, in small florets
  • 4 tablespoons of pesto
  • 500 grams of cherry or snack tomatoes
  • handful of fresh basil
  • 200 grams (buffalo) mozzarella
  • a few handfuls of garlic & herb salad topper from good4U

Can’t find the salad topper? Then toast some pine nuts in a dry frying pan. Also very tasty!

Preparation method:

Boil the cauliflower for about 20 minutes. We ourselves like the pasta to be al dente, so it can usually be a little shorter. Look on the packaging of the pasta.

Meanwhile, cut the mozzarella into pieces and tomatoes in half and tear the basil into pieces. When the cauliflower and pasta are cooked, you can stir this together and immediately add the pesto.

Then decorate the plates nicely with the tomatoes, mozzarella, basil and topping.
