You can make the most delicious combinations with meat, fish or vegetables; from halloumi with peach, salmon with miso to chicken with harissa. To then – completely mellow – drink wine outside the long evening.

These bacon skewers with honey soy marinade are the perfect combination of umami and a hint of sweetness, making them a guaranteed success!

Ingredients

  • 80 ml sweet soy sauce (5 tbsp)
  • 3 el soy sauce
  • 1 el liquid honey
  • 800 g pork belly without rind in 3 cm cubes
  • 2 spring onions finely chopped
  • 1⁄2 red chili pepper finely chopped
  • 2 el rice vinegar
  • 1 el mirin
  • 2 el peanut oil
  • coriander finely chopped
  • steamed rice for it
  • also needed: 8 metal skewers

Instructions

  • Mix the sweet soy sauce, soy sauce and honey in a saucepan and heat to boiling point. Let it reduce for 8-10 minutes. Remove from heat and let cool. Place the pork belly in a bowl and cover with the cooled marinade. Leave to marinate in the refrigerator for 45-60 minutes.
  • Meanwhile, place spring onion and chilli in a small bowl and sprinkle generously with sea salt flakes. Add the rice vinegar and mirin and leave for 10-15 minutes. Stir the peanut oil through the spring onion dressing.
  • Allow the cubes of meat to return to room temperature. Stick 3-4 cubes of meat on each skewer. Place on a plate.
  • Light the barbecue or heat the grill pan over medium to high heat. Grill the skewers for 8-10 minutes per side until cooked through and caramelised; brush them every 5 minutes with the rest of the marinade.
  • Place the skewers on a platter and spoon the spring onion dressing over them. Sprinkle with coriander and serve with steamed rice.
